Almond Chicken Salad
A nutty chicken salad served with rye bread.

Ingredients
8 - oz boneless skinless chicken breasts , cooked (cut into strips)
2 - medium celer stalks , sliced
1 tbsp - slivered almonds
2 tbsp - fat free mayonnaise
1 tsp - dried dill weed
1 pinch - salt (optional)
2 - piece slice rye bread (optional)
1 pinch - black pepper

Directions
1. Chop chicken and celery. Place in small mixing bowl.
2. Toast almonds in toaster oven until golden. Add to chicken.
3. Stir in mayonnaise, dill, salt, and pepper.
4. Spoon salad onto two separate plates and serve with rye bread.

Additional Information
To lower the carbohydrates, serve on top of large lettuce leaves in place of bread.

Anytime Pizza
This english muffin pizza is a great, quick treat.

Ingredients
2 - piece English Muffin , split (substitute 1/2 loaf Italian or French bread)
1/2 cup - Sauce, pizza, original
1/2 cup - part skim shredded mozzarella (substitute shredded cheddar)
3 tbsp - chopped green bell peppers , chopped
3 tbsp - fresh mushroom slices (may substitute canned)
1 pinch - italian seasoning (optional)

Directions
1. Toast the English muffin until slightly brown.
2. Top muffin with pizza sauce, vegetables and low-fat cheese.
3. Sprinkle with Italian seasonings as desired.

5. Heat until cheese melts.


Additional Information
Pita bread may also be substituted for the english muffin.


Apple-Raisin Ham Rolls
Ham baked in crescent rolls with an apple and raisin sauce on top.

Ingredients
8 oz - Rolls Dough, crescent, reduced fat, refrigerated (Pillsbury)
6 oz - Lunchmeat, ham, extra lean, 5% fat, sliced
1 - sugar free, reduced calorie vanilla pudding mix (4 serving package)
1 1/4 cup - cold water
1 tsp - ground cinnamon (or apple pie spice)
2 cup - Apples, fresh, chopped , peeled and finely chopped (cooking apples)
4 oz - seedless raisins

Directions
1. Preheat the oven to 375 degrees.
2. Unroll the crescent rolls and separate dough into 8 triangles. Separate ham slices into 8 pieces. Fold each pile of ham in half and place on large end of roll triangles.
3. Roll each triangle up and place on an ungreased baking sheet. Then bake for 10 to 15 minutes, until golden brown.
4. Meanwhile, mix together the dry pudding mix, water, apple pie spice, apples, and raisins. Then cook over medium heat, stirring often.
5. When mixture thickens and starts to boil remove from heat.
6. Place 1 ham crescent on a plate and spoon about 3 tablespoons warm sauce over the top.
