America's Favorite Pork Chops
Pork chops simply marinated in Italian dressing

Ingredients
4 - boneless pork chops , about 3/4-inch thick
3/4 cup - Salad Dressing, Italian, unsalted
1 tsp - Sauce, worcestershire, low sodium

Directions
1. Place all ingredients in a self sealing bag. Seal bag and place in refrigerator for at least 20 minutes (or as long as overnight).
2. Remove chops from bag, discarding marinade, and grill over a medium hot fire, turning once, until just done, about 8 to 11 minutes total cooking time.

Additional Information
Important Note: The marinade in this recipe is incorporated into the nutritional analysis. Since most of this is discarded, the Nutrition Facts are not exactly accurate. Serve with sliced tomatoes in vinagrette, broccoli spears and garlic mashed potatoes.

Anise Seed Meatloaf
Pork meat loaf mixed with prunes, pumpernickel bread, and anise seeds.

Ingredients
1 - cooking spray
1/2 tsp - anise seed
1 cup - fresh chopped onion , finely
1/2 cup - port wine (or sweet red wine)
1/2 cup - pitted dried prunes , chopped
1 tbsp - dijon mustard
3/4 tsp - salt
1/4 tsp - black pepper
2 piece - Bread, pumpernickel, regular slice , torn into small pieces
1 1/2 lb - ground pork

Directions
1. Preheat oven to 375 degrees F.
2. Heat a small cooking spray coated pot over medium heat. Saute anise seeds 1 minute, add onions and cook 3 minutes. Mix in wine and prunes and let boil 3 minutes, stirring frequently.
3. Add anise seed mixture, mustard, salt, pepper, and bread to a large bowl and combine well. Let mixture rest until cooled.
4. Combine pork with anise seed mixture and blend well.
5. Arrange mixture in a 9 x 4 inch cooking spray coated loaf pan.
6. Bake 1 hour or until a meat thermometer reads 160 degrees F. Let rest 10 minutes before slicing.


Apple and Spice Pork Roast
This roast uses applesauce as part of the glaze and sauce.

Ingredients
3 lb - Pork, roast, top loin, raw (boneless)
1 cup - unsweetened applesauce
1/3 cup - packed brown sugar
2 tsp - vinegar
1 tsp - yellow mustard
1/8 tsp - ground cloves
1 tbsp - white all purpose flour
1/2 tsp - salt
1/4 tsp - sugar
1/8 tsp - garlic powder
1/8 tsp - black pepper , freshly ground

Directions
1. Heat oven to 350 degrees F. Stir together applesauce, brown sugar, vinegar, mustard and clove in small bowl; refrigerate half of the applesauce mixture and set aside remaining applesauce mixture.
2. Combine flour, salt, sugar, garlic powder and pepper in another small bowl.
3. Rub flour mixture evenly over entire surface of pork. Place pork on rack in shallow roasting pan.
4. Roast, uncovered, until internal temperature is 140 degrees F. Spoon reserved applesauce mixture over roast. Roast until internal temperature is 155 degrees F., 1 to 1 1/2 hours total cooking time (about 18-20 minutes per pound).
5. Transfer roast to serving platter; cover with foil and let stand for 15 minutes before slicing. Heat chilled applesauce mixture in small saucepan until boiling; boil for 1 minute. Spoon heated applesauce mixture over pork slices.

A dish that evokes Sunday dinner in late fall.

Asian Chicken Kabobs
Chicken marinated in Asian spices broiled with fresh vegetables.

Ingredients
1 lb - boneless skinless chicken breasts , cut into 1-1/2" pieces
2 - small zucchini , cut into 1-inch slices
8 - Mushrooms, fresh, large
1 cup - chopped red bell peppers (or yellow or green)
2 tbsp - low sodium soy sauce
2 tbsp - cooking sherry
1 tsp - sesame oil , dark
2 - medium garlic cloves , minced
2 - fresh green onions , cut into 1 inch pieces

Directions
1. In large plastic resealable food storage bag, place chicken with zucchini, mushrooms and bell peppers.
2. In small bowl whisk soy sauce, sherry, oil and garlic.
3. Pour mixture over chicken and vegetables and seal bag.
4. Turn bag to coat contents and allow to marinate in refrigerator for at least 30 minutes or up to 4 hours.
5. Place 4 - 12" skewers in water and let soak 20 minutes.
6. Drain and reserve marinade in small saucepan.
7. Bring marinade to boil for 2 minutes.
8. Arrange chicken, zucchini, mushrooms, and onions equally on each skewer.
9. Coat broiler pan with cooking spray.
10. Place kabobs on broiler pan. Brush with marinade.
11. Place kabobs 5 to 6 inches from heat and broil for 5 minutes.
12. Turn kabobs over and brush with remaining marinade.
13. Broil kabobs for an additional 5 minutes or until chicken is no longer pink.
14. Transfer kabobs to serving platter.
